Blueberry Breakfast Quinoa

INGREDIENTS
- 1/4 cup quinoa, dry rinsed thoroughly
- 1/2 cup soy milk, enriched vanilla
- 1/4 teaspoon cinnamon, ground
- 1/4 teaspoon vanilla extract
- 2 tablespoons nuts, pecans chopped
- 1 ¼ cups blueberries
PREPARATION
Place the quinoa and soymilk in a small saucepan over medium-high heat. Bring to a boil, then reduce heat to a simmer. Cook until most of the liquid has been absorbed, about 15-20 minutes.
Stir in cinnamon, vanilla, pecans, and blueberries. Serve immediately.
