Blueberry Breakfast Quinoa

  • 1/4 cup quinoa, dry rinsed thoroughly
  • 1/2 cup soy milk, enriched vanilla
  • 1/4 teaspoon cinnamon, ground
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons nuts, pecans chopped
  • 1 ¼ cups blueberries

Place the quinoa and soymilk in a small saucepan over medium-high heat. Bring to a boil, then reduce heat to a simmer. Cook until most of the liquid has been absorbed, about 15-20 minutes.

Stir in cinnamon, vanilla, pecans, and blueberries. Serve immediately.
