A Greek style cucumber & yogurt dip that is super refreshing and equally easy to make. This is a great way to cool off after a particularly hot summer day and makes for the perfect party-starter!

Tzatziki, Crunchy Cucumbers recipe

YIELD: 2 Cups

PREP TIME: 10 minutes

COOKING TIME: 10 minutes

  • 1 large cucumber (unpeeled)
  • 1 1/2 Cups Greek Yogurt – plain
  • 2 cloves garlic – finely minced
  • 2 Tbsp Extra virgin olive oil
  • 1 Tbsp white vinegar
  • 1/2 tsp salt
  • 1 Tbsp fresh dill – finely chopped

Grate the cucumber and drain through a fine mesh sieve overnight in the fridge.

Combine the yogurt, garlic, oil, vinegar, and salt in a large bowl. Cover and refrigerate overnight.

Transfer the grated cucumber and fresh dill to the yogurt mixture and stir to combine. Serve chilled with pita bread for dipping.
