Strawberry Coulis
The perfect accompaniment to pancakes, crepes and vanilla ice cream.

INGREDIENTS
- 2 boxes fresh strawberries
- 1/2 cup sugar
- 1 1/2 Tbsp lemon juice
- Pro-tip: Adjust sugar according to the tartness of the strawberries. It is always better to err on the side of tart than over-sweet.
PREPARATION
In a medium saucepan, combine the strawberries, sugar, and lemon juice. Bring to a boil over medium-high heat. Transfer to a blender.
Purée until smooth, strain, and set aside. Store in a sealed container in the refrigerator for up to 1 week.
