Strawberry Avocado Salad
An easy, quick recipe which makes a pretty side dish or lunch mains.

YIELD: 4-5 servings
PREP TIME: 10 minutes
COOKING TIME: 10 minutes
INGREDIENTS
- 3 cups of baby spinach
- 2 cups of arugula
- salt & pepper
- 1 1/2 cups of sliced fresh strawberries
- 1 avocado, sliced
- 1/4 cup pecans
- 1/3 cup feta cheese - cubes
Balsamic Vinaigrette:
- 1/4 cup balsamic vinegar
- 3 tablespoons olive oil
- 1 tablespoon dijon mustard
- 1 tablespoon raw honey
- 1 teaspoon dried basil
- salt & pepper to taste
PREPARATION
Pro-tip: If you don’t have access to dried basil, freshly chopped basil can be used as well. The flavour will be more intense with fresh basil but don’t overdo the basil as it will make the dish taste bitter.
In a small bowl add balsamic vinegar, olive oil, dijon mustard, raw honey, dried basil, salt and pepper to taste. Whisk together to make balsamic Vinaigrette. Alternatively put all the ingredients in a mason jar and close the lid tightly. Shake to combine.
In a large bowl, add spinach, arugula, strawberries, avocado, pecans, crumbled feta cheese and then drizzle with Balsamic Vinaigrette.
