Tomato & Basil Bruschetta

Juicy sweet cherry tomatoes burst open in warm olive oil,
creating a luxuriously silky sauce that comes together in minutes.

Tomato & Bastl Bruschetta

PREP TIME: 10 minutes

COOKING TIME: 5 minutes

  • Salt & Pepper
  • S2 Tbsp olive oil, divided
  • 2 garlic cloves, minced
  • 2 large garlic cloves, finely chopped
  • 2 pints cherry or grape tomatoes
  • 1 Tbsp minced fresh basil leaves
  • 1 baguette

Heat 1 Tb. olive oil in a large fryingpan over medium-high flame until it just starts to smoke.

Add tomatoes, and season with salt and pepper.

Sauté, shaking pan frequently, until tomatoes soften and skins just begin to wrinkle, about 2 minutes. Stir in the garlic and continue to shake the pan until garlic is fragrant.

Off heat, stir in the basil and remaining 1 Tb. olive oil, then serve on toasted slices of baguette.
