Blistered Cherry Tomatoes

An easy, quick recipe which makes
a pretty side dish or main ingredient for warm salads.

Blistered Cherry Tomatoes

YIELD: 4 servings

PREP TIME: 5 minutes

COOKING TIME: 5 minutes

  • 2 tsp butter
  • 1 pint red and yellow cherry tomatoes, halved
  • 1 tsp chopped fresh basil
  • Salt & freshly ground pepper to taste
  • 1/2 tsp white sugar
Pro tip

If you don’t have access to fresh basil, dried basil can be used as well. The flavour will not be as intense as fresh basil but don’t overdo the dried basil as it will make the dish taste bitter.


Melt butter in a pan over medium-high heat. Add the cherry tomatoes, basil, and sugar.

Cook for about 30 seconds, then season to taste with salt and pepper. Continue cooking for a few seconds more until the tomatoes have just started to blister.

Serve as a side dish with meat or use as a topping on bruschetta.
