Burst Tomato-Tarragon Dipping Sauce
An easy, quick dipping sauce recipe that pairs well with chicken nuggets,
vegetable fritters and grilled prawns.

COOKING TIME: 5 minutes
INGREDIENTS
- 2 Tbsp Olive Oil
- 2 pints cherry tomatoes
- 4 cloves garlic, sliced
- 1/4 cup tarragon, coarsely chopped
- Salt & pepper to taste
- 1 Tbsp balsamic vinegar or sherry vinegarr
PREPARATION
In a large skillet with a lid, heat 2 tbsp. olive oil over medium-high heat.
Add the tomatoes and garlic, then shake the skillet and season with salt and pepper. Cover and cook, shaking occasionally, until the tomatoes begin to burst, roughly 3 minutes.
Uncover and coarsely mash the tomatoes. Cook until the sauce thickens slightly, about 1 minute. Stir in the tarragon and vinegar; remove from the heat. This sauce can also be used with spaghetti. Just sprinkle some parmesan on top once you have tossed the pasta in and Voila! You have dinner ready!
