SOOTHING SPAGHETTI WITH ROAST TOMATO PEPPER & MATHANIA CHILLI PESTO

INGREDIENTS
- 250g spaghetti
FOR THE PESTO
- 1/2 cup roasted Natures Miracle Red Peppers
- 1/2 cup roasted Natures Miracle Tomatoes
- Salt
- Pepper
- 6 cloves of garlic
- 1 tsp ginger
- Mathania chillies
- 1 tbsp roasted peanuts
- 50g tofu
- 1 cup olive oil
METHOD
- Blend all the pesto ingredients to form a saucy pesto.
- Cook pasta spaghetti in salted boiling water for 9 minutes.
- Drain and toss the spaghetti with pesto.
- This pesto can be used as a sandwich spread too.
