SOOTHING SPAGHETTI WITH ROAST TOMATO PEPPER & MATHANIA CHILLI PESTO
INGREDIENTS
  • 250g spaghetti
FOR THE PESTO
  • 1/2 cup roasted Natures Miracle Red Peppers
  • 1/2 cup roasted Natures Miracle Tomatoes
  • Salt
  • Pepper
  • 6 cloves of garlic
  • 1 tsp ginger
  • Mathania chillies
  • 1 tbsp roasted peanuts
  • 50g tofu
  • 1 cup olive oil
METHOD
  • Blend all the pesto ingredients to form a saucy pesto.
  • Cook pasta spaghetti in salted boiling water for 9 minutes.
  • Drain and toss the spaghetti with pesto.
  • This pesto can be used as a sandwich spread too.
