SPICED UP MIRACULOUS PEPPERONATA

INGREDIENTS
- Natures Miracle Bell Peppers-red, yellow & green
- 1 peeled red onion
- 250g Natures Miracle Tomatoes
- 3-4 capers, chopped
- Green and black olives 8-10
- Natures Miracle Cherry Tomatoes
- 1 tsp rosemary
- 1 tbsp sliced garlic
- 1 tbsp chilli flakes
- 1 tsp chopped parsley
- A pinch of oregano
- 1/2 cup extra virgin olive oil
METHOD
- Preheat the oven to 200 .C.
- Season the Natures Miracle Bell Peppers with salt, pepper and a little olive oil.
- Wrap the onions, seasoned with salt, and pepper in a toil.
- Roast the peppers and onions for 40 minutes.
- Remove from the oven and cool until they are easy to handle.
- Peel the skins off the peppers. Remove seeds and stems. Cut into strips.
- Peel the onion, cut into wedges and open up into petals.
- Toss the peppers, onions, tomatoes, along with rosemary, oregano, parsley, capers and seasonings.
- Pour olive cil and keep it stored under oil in an airtight container or a mason jar.
