Tomatoes, Peppers
  • Natures Miracle Bell Peppers-red, yellow & green
  • 1 peeled red onion
  • 250g Natures Miracle Tomatoes
  • 3-4 capers, chopped
  • Green and black olives 8-10
  • Natures Miracle Cherry Tomatoes
  • 1 tsp rosemary
  • 1 tbsp sliced garlic
  • 1 tbsp chilli flakes
  • 1 tsp chopped parsley
  • A pinch of oregano
  • 1/2 cup extra virgin olive oil
  • Preheat the oven to 200 .C.
  • Season the Natures Miracle Bell Peppers with salt, pepper and a little olive oil.
  • Wrap the onions, seasoned with salt, and pepper in a toil.
  • Roast the peppers and onions for 40 minutes.
  • Remove from the oven and cool until they are easy to handle.
  • Peel the skins off the peppers. Remove seeds and stems. Cut into strips.
  • Peel the onion, cut into wedges and open up into petals.
  • Toss the peppers, onions, tomatoes, along with rosemary, oregano, parsley, capers and seasonings.
  • Pour olive cil and keep it stored under oil in an airtight container or a mason jar.
