The Perfect Chilli Con No Carne
INGREDIENTS
  • 1 cup soya mince, soaked in buttermilk
  • 1 tbsp olive oil
  • 1 bay leaf
  • 1 medium onion, chopped
  • 1 tbsp chopped garlic
  • 1 medium carrot. chopped
  • 2 cups Natures Miracle Tomatoes chopped
  • 1/2 cup chopped Natures Miracle Mixed Bell peppers
  • 1 tbsp cumin powder
  • 1 tsp red chilli powder
  • 1 pinch cinnamon
  • 1/4 cup split black gram (urad dal), soaked and parboiled
  • 1 cup fresh Natures Miracle tomato puree
  • 1 orange juice extract
  • 5g dark chocolate
  • 2-3 sprigs of fresh parsley
  • 2-3 sprigs of tresh coriander
METHOD
  • Heat olive oil in a non-stick pan. Add the bay leaf and onions then sauté a minute, next add minced soya and sauté. Now add garlic. chopped tomatoes and carrots to this mix and sauté for a minute.
  • Add Natures Miracle Mixed Bell peppers, cumin powder, chilli powder and cinnamon to this and sauté for a minute.
  • Next, add black gram, Natures Miracle Tomato puree and orange juice to it. Grate the chocolate and a cup of water and mix well. Cover it and cook it for 4-5 minutes
  • Mix chopped parsley, coriander sprigs, salt to taste and mint leaves to it.
  • Transfer the chilli con carne into a serving bowl Garnish with chopped spring onion greens.
  • Serve hot with steamed brown rice.
